A comforting and easy one-pot chicken stew made in your slow cooker, perfect for a warming family dinner.

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch (optional, for thickening)
  • 1/4 cup cold water (optional, for thickening)

Instructions

  1. Place chicken pieces in the bottom of your slow cooker.
  2. Add chopped onion, sliced carrots, sliced celery, and minced garlic over the chicken.
  3. Pour in the chicken broth and diced tomatoes.
  4. Stir in thyme, rosemary, black pepper, and salt.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and cooked through.
  6. If you prefer a thicker stew, whisk together cornstarch and cold water in a small bowl. Stir this mixture into the slow cooker during the last 30 minutes of cooking.
  7. Serve hot.

  • This stew is excellent for meal planning and can be made ahead.
  • For a gluten-free option, ensure your chicken broth and diced tomatoes are gluten-free.
  • You can add other vegetables like potatoes or peas during the last hour of cooking.
