1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder

Instructions
Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease the paper.
In a large bowl, whisk together the melted butter, brown sugar, and 1/2 cup of granulated sugar until smooth.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate medium bowl, whisk together the flour, baking powder, 1 teaspoon of cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix to keep your blondies chewy.
In a small bowl, combine the 1/4 cup of granulated sugar and 1 tablespoon of cinnamon for the topping. Mix well.
Spread half of the blondie batter evenly into the prepared pan.
Sprinkle half of the cinnamon-sugar topping over the batter layer.
Dollop the remaining batter over the first layer and gently spread it out.
Sprinkle the remaining cinnamon-sugar topping evenly over the top of the batter.
Bake for 28 to 32 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs attached.
Let the blondies cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
