  • 1 pound elbow macaroni
  • 4 cups water
  • 1 teaspoon salt
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 4 cups shredded cheddar cheese

Instructions

  1. Combine macaroni, water, and salt in a large pot. Bring to a boil over high heat. Cook, stirring occasionally, until macaroni is tender, about 8-10 minutes. Drain any excess water.
  2. Return the pot to medium heat. Add butter and melt. Whisk in flour until smooth. Cook for 1 minute, whisking constantly.
  3. Gradually whisk in milk until smooth. Bring to a simmer, whisking often. Cook until sauce thickens, about 5 minutes.
  4. Remove from heat. Stir in pepper and paprika. Add shredded cheddar cheese, stirring until melted and smooth.
  5. Add drained macaroni back to the pot. Stir to coat evenly with cheese sauce. Serve immediately.
