Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. Prepare the streusel: In a small bowl, combine the flour, brown sugar, and cinnamon for the topping. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set aside.
  3. Prepare the dry ingredients: In a large bowl, whisk together the 1 3/4 cups flour, granulated sugar, baking powder, and salt.
  4. Prepare the wet ingredients: In a separate medium bowl, whisk together the melted butter, egg, milk, and vanilla extract until combined.
  5. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  6. Fold in strawberries: Gently fold in the diced fresh strawberries until they are evenly distributed throughout the batter.
  7. Fill the muffin cups: Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full.
  8. Top with streusel: Sprinkle the prepared streusel topping evenly over the batter in each cup.
  9. Bake: Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
