Create a restaurant-quality Tuscan chicken dish in your own kitchen with this easy one-pan recipe. Tender chicken breasts are stuffed with a creamy mixture of sun-dried tomatoes and spinach, then pan-seared and finished in a rich cream sauce. Perfect for a weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Butterfly the chicken breasts by slicing them horizontally, almost all the way through, to create a pocket.
  3. In a small bowl, combine the chopped spinach, sun-dried tomatoes, softened cream cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well.
  4. Stuff the cream cheese mixture evenly into the pockets of the chicken breasts.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat.
  6. Sear the stuffed chicken breasts for 2-3 minutes per side, until golden brown.
  7. Remove the chicken from the skillet and set aside.
  8. Pour the heavy cream and chicken broth into the same skillet. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  9. Return the chicken breasts to the skillet, nestling them into the sauce.
  10. Sprinkle the mozzarella cheese over the top of the chicken.
  11. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  12. Let the chicken rest for a few minutes before serving.
