Easy and festive holiday appetizer bites featuring roasted sweet potato slices topped with creamy whipped goat cheese, tart cranberries, and crunchy pecans.

Ingredients

  • 1 large sweet potato, scrubbed
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 8 ounces goat cheese, softened
  • 2 tablespoons heavy cream
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potato into 1/4-inch thick rounds.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper on a baking sheet.
  4. Roast for 15-20 minutes, flipping halfway through, until tender and lightly browned.
  5. While the sweet potatoes roast, whip the softened goat cheese with heavy cream until smooth and creamy.
  6. Once the sweet potato rounds are roasted, let them cool slightly.
  7. Top each sweet potato round with a dollop of whipped goat cheese.
  8. Sprinkle with dried cranberries and chopped pecans.
  9. Garnish with fresh rosemary sprigs if desired.

Notes

  • For make-ahead convenience, roast the sweet potato rounds and prepare the whipped goat cheese a day in advance. Store them separately in airtight containers in the refrigerator. Assemble just before serving.
  • To create a beautiful holiday appetizer board, arrange the assembled sweet potato rounds on a platter or wooden board. Fill in any gaps with extra cranberries, pecans, and rosemary.
