  • 1.5 lbs ground beef
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 2 medium sweet potatoes, peeled and cubed
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can corn, drained
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • Optional toppings: avocado, shredded lettuce, diced tomatoes, shredded cheese, sour cream, cottage cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with 1/2 tbsp olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  3. While the sweet potatoes roast, heat the remaining 1/2 tbsp olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  4. Stir in the chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Cook for 1-2 minutes until fragrant.
  5. Add the rinsed black beans and drained corn to the skillet with the beef. Stir to combine and heat through.
  6. To assemble the bowls, divide the roasted sweet potatoes among four bowls.
  7. Top the sweet potatoes with the seasoned ground beef mixture.
  8. Add your desired optional toppings such as salsa, cilantro, avocado, lettuce, tomatoes, cheese, sour cream, or cottage cheese.

Notes

  • These bowls can be stored in the refrigerator for up to 3-4 days. Keep components separate if possible for best texture.
  • For a vegetarian option, substitute the ground beef with seasoned lentils or crumbled tofu.
