Make crispy, flavorful zucchini fritters with minimal ingredients and effort. This recipe offers a quick way to use garden zucchini as a snack or side dish.

  • 2 cups grated zucchini
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. Grate the zucchini and place it in a colander. Sprinkle with 1/2 teaspoon salt and let it sit for 10 minutes to draw out moisture. Gently squeeze out excess water from the zucchini.
  2. In a medium bowl, combine the squeezed zucchini, flour, egg, Parmesan cheese, parsley, pepper, and the remaining 1/2 teaspoon salt. Mix until just combined.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon to form patties. Do not overcrowd the skillet.
  5. Fry for 3-4 minutes per side, until golden brown and crispy.
  6. Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
  7. Serve warm.

Notes

  • For extra crispy fritters, ensure you squeeze out as much moisture as possible from the zucchini.
  • You can bake these fritters at 400°F (200°C) for 15-20 minutes, flipping halfway through, for a healthier option.
  • Air fryer instructions: Preheat air fryer to 375°F (190°C). Lightly spray the basket with oil. Place fritters in a single layer and cook for 8-10 minutes, flipping halfway, until golden and crisp.
