Instructions

  1. Preheat your oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Prepare the crust: In a large bowl, whisk together 1 1/2 cups flour, 1/2 cup granulated sugar, and salt. Cut in 1 cup of cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press two-thirds of the crumb mixture evenly into the bottom of the prepared pan to form the crust. Reserve the remaining one-third of the crumbs for the topping.
  4. Prepare the apple filling: In a separate bowl, toss the diced apples with 1/2 cup brown sugar, 2 tablespoons flour, 1 teaspoon cinnamon, nutmeg, and lemon juice until coated.
  5. Spread the apple mixture evenly over the crust in the pan.
  6. Prepare the streusel topping: In a small bowl, combine the remaining 1/2 cup flour, 1/2 cup brown sugar, 1/4 cup granulated sugar, and 1/2 teaspoon cinnamon. Cut in the remaining 1/4 cup cold butter until crumbly.
  7. Sprinkle the reserved one-third of the crust mixture and the streusel topping mixture evenly over the apples.
  8. Bake for 40 to 45 minutes, or until the topping is golden brown and the apples are tender when pierced with a fork.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
