Easy Cranberry Brie Bites with Puff Pastry

Make these simple, festive brie bites using puff pastry and cranberry sauce. They are perfect for holiday parties and gatherings.

Ingredients

  • 1 sheet puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into small cubes
  • 1/3 cup cranberry sauce (whole berry or jellied)
  • 1 egg, beaten (for egg wash)
  • Optional: 2 tablespoons chopped pecans

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a mini muffin tin.
  2. Unfold the thawed puff pastry sheet onto a lightly floured surface. Cut the pastry into 12 equal squares.
  3. Gently press each pastry square into a cup in the mini muffin tin.
  4. Place one small cube of brie cheese into the bottom of each pastry cup.
  5. Top the brie with about 1/2 teaspoon of cranberry sauce. If using, sprinkle a few chopped pecans over the cranberry sauce.
  6. Brush the edges of the exposed puff pastry lightly with the beaten egg wash.
  7. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed, and the brie is melted and gooey.
  8. Let the brie bites cool in the tin for 5 minutes before carefully removing them with a small offset spatula. Serve warm.

Notes

  • For the gooiest center, do not overbake. Watch for the pastry to turn golden brown.
  • You can prepare these ahead of time. Place the assembled, unbaked bites on a baking sheet, cover, and chill for up to 24 hours. Add 2-3 minutes to the baking time if baking from cold.
  • Substitute puff pastry with refrigerated crescent roll dough, cutting the dough into squares instead of using the pre-cut triangles.
  • For a savory variation, swap the cranberry sauce for fig jam and add a small piece of prosciutto before baking.
