A simple, foolproof recipe for classic, fluffy pancakes using common pantry ingredients. Perfect for a weekend breakfast.

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  2. Make a well in the center and pour in the milk, egg, and melted butter. Mix until just combined. Do not overmix; a few lumps are okay.
  3. Heat a lightly oiled griddle or frying pan over medium-high heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve hot with your favorite toppings.

Notes

  • For a richer flavor, you can substitute buttermilk for regular milk.
  • If you don’t have buttermilk, add 1 tablespoon of lemon juice or white vinegar to your milk and let it sit for 5 minutes before using.
  • To freeze pancakes, cool them completely, then wrap individually in plastic wrap and place in a freezer bag. Reheat in a toaster or oven.
