Quick and simple pizza muffins perfect for a kid-friendly snack or a grab-and-go lunchbox addition.

Ingredients

  • 1 cup Bisquick mix
  • 1/2 cup milk
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons marinara sauce
  • 2 tablespoons mini pepperoni

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line with mini muffin liners.
  2. In a medium bowl, combine Bisquick mix and milk. Stir until just combined. Do not overmix.
  3. Gently fold in the shredded mozzarella cheese and mini pepperoni.
  4. Spoon about 1 tablespoon of the batter into each mini muffin cup. Top each with a small dollop of marinara sauce.
  5. Bake for 12-15 minutes, or until golden brown and cooked through.
  6. Let cool slightly before serving.

Notes

  • These muffins freeze well for future snacks. Reheat in a microwave or toaster oven.
  • Feel free to add other favorite pizza toppings like finely chopped bell peppers or cooked sausage.
  • For a pull-apart experience, you can bake these in a regular-sized muffin tin and then pull them apart into sections.
